Grain
Cereal is a staple in many diets around the world. Food products falling into the cereal group include rice, bread, cereals, and oatmeal. The grain itself is broken into two major groups: grains and legumes.

For consistency, and keeping in mind the major food groups, we will cover legumes in protein later, down the list. Most people associate cereal grains with cereal foods anyway. These are broken into two different subcategories: whole grains and refined grains.

In short, whole grains are grain products made from whole grain kernels, including germs, bran, and endosperm. These parts of the cereal kernel contain most of the nutrients including fiber, protein, and vitamins, but also some fat. The removal of these parts of the kernel in a process known as milling creates refined grain products.
